Heidi’s Crispy Chicken Cordon Bleu
What you’ll need
4 Boneless Chicken Breasts
Salt and Pepper to Taste
1 tsp Onion Powder
4 – 8 Swiss Cheese Slices (Depending on how cheesy you want them)
4 Slices Cooked Ham (I have them slice it as for sandwiches at the deli)
1 Cup Panko Breadcrumbs
3 Eggs
1 Cup Flour
Directions –
ctions –Preheat oven to 350 degrees
Coat baking dish with a light layer of Olive Oil (not light or extra virgin)
Pound chicken breast to 1/4 inch thickness (I put the chicken between 2 pieces of parchment paper)
Sprinkle chicken with salt and pepper
Place one ham slice and one or two pieces of cheese on each breast, roll and secure with toothpicks, let sit for 10 minutes or so
Mix the onion powder in the flour and place in shallow dish (or pour on clean countertop)
Beat eggs in shallow dish
Pour breadcrumbs in shallow dish (or pour on clean countertop)
After chicken rolls have set you should be able to remove the toothpicks and have them hold their shape. If not I just work around the toothpick.
Roll each piece in the flour, then the eggs, and coat with breadcrumbs
Place in baking dish and cover with foil
Bake 35 minutes or until chicken is no longer pink
Optional – Top with Alfredo Sauce or Gravy of your choice
