WitOne of the hardest parts about trying to eat better, at least for me, is that I tend to get stuck in a rut and end up eating out because I start to crave something other than the boiled eggs, baked chicken, steamed veggies, etc…
Last night I was home alone and really wanted Chinese food, so I got creative with the ingredients I already had…
2 Chicken breasts
Cabbage
Broccoli
Garlic
Onion
Sesame Oil
Sinful Jalapeño Oil

In my Instant pot I used the sauté function to heat the oils while adding 2 cloves of garlic (minced) and half of a small onion sliced thin. I cut the chicken into cubes and added them in, stirring to coat in the oil mixture. I added 2 cups of chicken broth and cooked on manual for 6 minutes and let slow release for 15 minutes. I drained most of the broth, added the cabbage, broccoli, and 1 TBS of lite soy sauce to the pot then put back on manual for 1 minute then quick released. The chicken was cooked perfectly and had tons of flavor. Great way to get my protein in and add some variety to my daily routine!
