Dieting is so hard when you are used to enjoying a few cocktails on the weekends. I have been trying to find a balance between cutting my carb intake without cutting into my lifestyle… This is most definitely a challenge when you enjoy food and drinks with friends and family as much as I do!
Yesterday was the first Sunday in a long time that my husband I were both home during the day with nowhere really to be and no pressing tasks needing to be taken care of. We wanted to sit out on in the yard a have a drink but he was wanting mojitos and I just didn’t want all of the calories that go into the way we typically make them. SOOOO I made my own recipe and my own simple syrup (which really was very simple)!
We ran to to Walmart to get the ingredients and I picked up this cute bottle for around $3, it will be perfect to make a small batch when needed, we’ll see how long it lasts 🙂
All I used was water and Truvia baking blend. For this size bottle I did 1 and 1/2 cup of water to 3/4 cup of Truvia mix. Whisked in a small sauce pan over medium heat for about 4 minutes, just until it thickened up a bit and then used a funnel to pour in the bottle. It turned out great and our mojitos were fabulous!
